Season steaks liberally with salt and pepper, let rest at room temperature for up to 40 minutes.
Heat grill to high and clean/oil grilling grate.
Place steaks on grill and cook until slightly charred, 4 to 5 minutes. Turn them over and continue to grill until deep char has developed and internal temperature is 135°F for medium-rare (3 to 5 minutes), 145°F for medium (5 to 7 minutes), or 150°F for medium-well (8 to 10 minutes).
Transfer steaks to a cutting board and rest for 5-10 minutes.
