  • 12 large scallops
  • salt and pepper
  • 1 Tbsp. olive oil
  • 1 cup white wine
  • 1 cup cherry tomatoes, halved
  • 4 cups spinach
  • 1 (3.5 oz.) tub Epicurean Butter Roasted Garlic Herb Flavored Butter

With simple ingredients, you can easily make restaurant-quality scallops that the whole family will enjoy.


  1. Season scallops with salt and pepper.
  2. Heat olive oil in sauté pan over high heat.
  3. Place scallops in pan and sauté for 1-2 minutes, flip and finish cooking for another 1-2 minutes.
  4. Remove scallops and set aside.
  5. Add white wine to pan and reduce by half.
  6. Add cherry tomatoes and sauté for 30 seconds.
  7. Whisk in Epicurean Butter Roasted Garlic Herb Flavored Butter.
  8. Add spinach and wilt.
  9. Spoon sauce with spinach and tomatoes on 4 plates.
  10. Place scallops on top of sauce.
  11. Serve with crusty bread to sop up all the extra sauce.
