Grilled Chicken With Chili Lime Butter Rice

  • 8 chicken breasts
  • ¼ cup olive oil
  • ¼ cup lime juice
  • 2 tsp. cumin, ground
  • 5 tsp. salt
  • 2 cups white rice
  • 3 cups water
  • 1 (3.5 oz.) Epicurean Butter Chili Lime Flavored Butter
  • optional: chopped cilantro & lime wedges

Liven up an ordinary chicken and rice dinner with Chili Lime butter. Extra flavor doesn't mean extra time in the kitchen when you cook with Epicurean Butter.


  1. Place chicken breasts, olive oil, lime juice, cumin, and 4 teaspoons of salt in a plastic baggie.
  2. Shake to coat chicken breasts well.
  3. Heat grill on high.
  4. While grill is heating, combine water, Epicurean Butter Chili Lime Flavored Butter, and remaining salt in a pot. Bring to a boil.
  5. Stir in rice, reduce to simmer, and cover.
  6. Rice should be done in about 20 minutes.
  7. While rice is cooking, place chicken on grill, and cook 4-5 minutes on each side.
  8. Divide rice between plates and top with grilled chicken.
  9. Optional: garnish with chopped cilantro and a lime wedge.
