Ingredients

  • French baguette, sliced crosswise into 12 slices
  • 2 medium-sized heirloom tomatoes, sliced into 1/4 inch pieces
  • 8 oz fresh mozzarella, sliced into 12 thin pieces
  • 12 pieces of basil (or another large leafy green like chard or romaine)
  • 2 tbsp Epicurean Butter Tuscan Herb Flavored Butter, softened
  • Salt and pepper, to taste

Toasted Caprese Sandwiches are a tasty appetizer or a refreshing lunch!

Instructions

  1. Set oven to 400 degrees F. Slice bread and place on sheet pan. Once heated, lightly toast for 5-6 minutes.
  2. Meanwhile, wash all produce and slice tomatoes and mozzarella.
  3. Remove bread from the oven and liberally spread Epicurean Butter Tuscan Herb Flavored Butter on all 12 pieces while the bread is warm. Add salt and pepper to taste.
  4. Assemble sandwiches and serve immediately.

Optional: Add a small grilled chicken breast or baked ham to make it a meal. Consider super-stacking your sandwich by adding one additional piece of mozzarella, basil, tomato, and bread. Instead of toasting in the oven, you could choose to warm the bread on a grill.
